Tex-Mex Waffles
- 1/2 cup Red pepper chopped fine
- 1/2 cup Green pepper chopped fine
- 1/2 cup Green Onion chopped
- 1 Tbs. Vegetable Oil
- 1 cup Flour
- 1 cup Cornmeal
- 1 Tbs. Baking powder
- 3 Eggs
- 8 oz. Plain Yogurt
- 1/2 cup Milk
- 1/3 cup Butter melted
- 1/2 cup Sour cream
- 3/4 cup Rage n’ Red Jalapeno
- 1/2 cup Sharp Cheddar grated
1. Place oil in fry pan and saute peppers and onions until tender (about 5 min.)
2. In small whip eggs then add yogurt, milk & melted butter
3. In large bowl mix flour, cornmeal, baking powder
4. Pour egg mixture into flour mixture
5. Stir until combined ( will be lumpy)
6. Gently fold in pepper mixture
7. Cook in Waffle Iron
8. Top with melted Pepper Jelly, sour cream & grated cheese
