Chicken Fajitas
Extra Extra.... We won a new table top DISC-IT Grill from the Scovie Awards in New Mexico. We won 18 awards for 2020 and this is our reward for the Raspberry Habanero winning the 2019 Grand Championship. So we put this baby to the test and made Chicken Fajitas and holy Hannah it did not disappoint. So hot and it cooked it so fast. Here is our recipe:

So we put this baby to the test and made Chicken Fajitas and holy Hannah it did not disappoint. So hot and it cooked it so fast. Here is our recipe:
- 2 lbs chicken breast
- 3 bell peppers(1 green, 1 yellow, 1 red) julienned
- 1 sweet onion julienned
- 3 cloves of garlic sliced or minced
- 4-6 oz Mango Madness Pepper Jelly
- 1-2 Tbs. avocado or olive oil
- Heat stir fry pan, add onions & bell peppers and stir-fry for several minutes
- Add chicken and mix well. Keep stirring until chicken is cooked through.
- Make a well in the middle and add the Mango Madness. Let it bubble up and then mix it all.
- Serve with flour or corn tortillas and all your favorite condiments. Shredded Mexican cheese, sour cream and Avocado are our favorites.
